The cuisine and style of food reflect the history and cultural diversity of North Africa. The Phoenicians of the 1st century brought sausages, the Carthaginians introduced wheat and its by-product, semolina. The Berbers adapted this into couscous, one of the main staples of their diet. Olives and olive oils were introduced before the arrival of the Romans. From the 7th century onwards, the Arabs introduced a variety of spices, like saffron, nutmeg, cinnamon, ginger and cloves, which contributed and influenced the culinary culture of North Africa. The Ottoman Turks brought sweet pastries and other bakery products, and from the New World, North Africa got potatoes, tomatoes, zucchini and chillies. However many resorts and hotels do offer restaurants that serve food from around the world so there is something to suit most tastes!
Nightlife in North Africa varies from resort to resort. For example nightlife in Luxor in Egypt is very laid back and quite hotel based, where as nightlife in Hurghada in Egypt is lively and clubs and bars are open until quite late. Many of the larger hotels in Tunisia have their own nightclubs and bars and put on their own shows for guests to enjoy. The larger resorts also have many bars and clubs, and although Tunisia is a Muslim country, alcohol is easily available. Morocco offers a variety of entertainment from casinos, bars, discos, restaurants and nightclubs, often with belly dancing. There are modern nightclubs in all the cities and resorts around the country.
